Whole wheat chocolate peanut cookies sweetened with palm jaggery

Have heard a lot that when kids grow up they demand munchies for umpteen reasons to follow behind it. And mothers find it hard to let them stick on to something healthier and sane. Salads in my mind in the coming days but as of now baked some cookies. Used palm jaggery instead of sugar and whole wheat instead of refined flour as usual. To add the protein content some powdered peanuts too!
Hope this will satiate their urge to munch on and curb their hunger and cravings too!

Recipe
Butter - 1/2 cup
Whole wheat flour- 1.5 cups
Peanut powder - 1 cup
Palm jaggery syrup - 1 cup
Baking powder - a pinch
Cocoa powder - 2-3 tspns
Choco chips - 1/2 - 1 cup ( optional)

Method
Throw in all the ingredients into a large deep bowl and mix well and gently with a fork or your fingers. Add few drops of milk to bring them together if you want.
Once the dough is formed, refrigerate the dough for at least 30 minutes.
Preheat the oven for about 10 minutes at 150 degrees Celsius
Remove the dough from the refrigerator and make small balls and place it on a greased baking tray.
Bake the cookies for about 20 minutes or until you see it all puffed up and bottom turns golden brown
Remove the cookies from the tray and lay on a wire rack to cool
Once cooled completely store in a clean jar and store.

Note : For the jaggery syrup, I melt 500 gms of palm jaggery with one cup of water, strain and store and use one cup of the syrup for this cookie.
Bake and enjoy
Thanks

Peanuts and pista chocolate (chikki? )

These days I do feel a little lazy to do the stories for my blog but nevertheless love to share the recipe for you and for me before I forget it. Anyway the story behind this  to send some small mini  treats in my kids snack box.. a chocolate treat :) Why to be only chocolate, hence stuffed some nuts into it. So following is the method, I wouldn't call it a recipe since this hardly need any measuring.

You need to have
Cooking chocolate
Pistachios
Cashewnuts
Pumpkin seeds
You can add the nuts of your choice too, but I primarily used peanuts ( organic peanuts :)   )

Method
All it takes is couple of minutes.
Chop the cooking chocolate evenly and melt it using a double boiler, once the chocolate is melted take it off from the boiler and then add in the nuts and mix well, You need to see a sufficient amount of chocolate floating so that it holds shape. If the nuts are too much it might not hold. . So once everything is mixed well, spread a butter paper and pour  the mixture to it, spread it well and leave it to dry. After a couple of minutes you can cut the slab in the shape of your choice and then gently remove from the butter paper.
Make sure its cooled properly and then store in a clean jar.

Spicy roasted peanuts

I love spicy roasted peanut tho some claims it is certainly unhealthy,  and I know many people who love roasted spiced peanuts. I never use to get the correct recipe until recently when my friend's mother in law shared it with me. The recipe is very simple the deal is just to know it right and get it right.
Following is the same

Ingredients
Peanuts- 1 cup
Chilli powder- 1/2- 1 tspn
turmeric powder- 1/2 - 1 tspn
chaat masala- 1/2 - 1 tspn
salt
Oil- 2-3 tspn

Roast the peanuts in oil in medium flame, switch off the flame and add the masalas to your taste. Done!

Note: If you wish to have peeled nuts may dry roast the nuts and remove the peels and then follow the recipe.

Coconut -peanut - garlic chutney

My dear next door neighbor often offers me this chutney and I have always relished the taste of it. I wanted to make  it my selves and patiently listened to her when she was explaining the recipe to me . I realized it is easy as any chutney and can be stored for few days too. It can be served with breakfast, lunch, dinner or even with snacks and sandwiches.  Here is the recipe for the simple garlic-coconut-peanut chutney

Grated coconut - half of one coconut
Peanuts- 2 handfuls
Garlic - one big pod
chilli powder- to your taste
Jeera- 1/2 tspn
salt

Dry roast the grated coconut, peanuts and garlic separately. Once cooled, powder in a mixer along with the other ingredients.
