Whole wheat chocolate and almond cookies with chocolate chunks


My boy loves anything sweet specially when its chocolaty and cookies top the list and he has been requesting me for a long time to bake some chocolate cookies. And off late he stopped requesting too, guess he thought amma wouldn’t bake as I have been emphasising on other better options of snacks recently.
Anyway today I thought of giving him a surprise and I made the cookie dough before he was back from school and baked it when he went out to play in the evening. And when he entered home he straight away walked into the kitchen to gobble up the cookie, of course I had to remind him to wash his hands. Also the little sister was also right beside him and they drooled at the melted chocolate oozing out!! He also counted the cookies and made sure he gets a fair share .. lol



In the meantime I took a bite on one and wohoo when the chocolate oozed out the child in me jumped with joy.


It was not a very different recipe from my usual cookie recipe yet I wanted to record this recipe.



Though I started off with a simple chocolate cookie it dint quite end up so.

Let me get to the recipe

Ingredients

Whole wheat flour – 1 cup
Almonds (I use mamra variety) – ½ cup
Egg – one
Sugar – ½ cup
Butter (salted) – ½ cup (100 gms)
Baking powder – one big pinch
Cocoa powder – 2 – 3 tsp.
Milk – ¼ - 1/3 cup
Chocolate chunks – 125 gms
  
Method

  • Wash the almonds well and soak for about ½ hour
  • Grind these almonds using milk and make a paste and keep aside
  • In a large bowl throw in the butter, sugar, flour, egg, cocoa powder, baking powder and the almond paste and mix it well using a fork and keep aside for about 30  mins
  • Chop the cooking chocolate into large chunks and throw in the cookie dough and mix well.
  • Meanwhile preheat the oven to 150 degrees Celsius for 10 mins
  • Grease the baking tray and scoop out the dough and place in the baking tray leaving a gap of at least an inch.
  • Place the tray in the top rack of the oven (that’s what I do for cookies) and bake for 20 - 25 minutes.
  • Remove the tray and carefully remove the cookies and place it in the wire rack.
  • Store in an airtight container once cooled.
The chocolate remained soft even the next day but not gooey, may be I could microwave for few seconds and leave it for few minutes before taking a bite and get the oozing chocolate effect

I used organic raw sugar in the this recipe, the granules are crushed sand and not crystals or fine powder.

Green tea crackers recipe


Yes, infused green tea in cookies :)



Definitely had doubts and curiosity as to how the flavour would come out. When experimented it was nice and tasted good too!




Recipe as follows

Whole wheat flour - 1 1/3 cup
butter - 1/4 cup
green tea powder - 2 tbsp ( finely crushed)
Sugar - 1- 2 tbsp
Salt - a pinch
Baking powder - a pinch
Milk - as required

Method
  • Throw in all the ingredients into a bowl and mix well. 
  • Knead gently using your finger and add the milk to bring the ingredients together. 
  • Let the dough rest for at least half an hour.
  • Roll it out, cut into shapes, and place in a greased baking tray. 
  • Bake it at 150 degrees Celsius  for about 15-20 minutes or until the sides turns golden brown.
  • Remove from the tray and let it to cool. 
  • Once cooled store in airtight jars! 


Bake and enjoy and eat with less guilt with a hot cup of tea/coffee :)

Recipe of Oats crackers with green chillis, thyme and sunflower seeds

Have always loved baking, specially baking cookies, sweet or savoury and today it’s a cracker which is a little spicy and healthy. Adults can munch on these without guilt, yes minimal amount of sugar and lots of oats and seeds, best had with a warm cup of tea :)



The recipe follows

Oats – 1 cup
Whole wheat flour – 1/2 cup
Butter - 1/4 cup
Sugar – 1 tbsp.
Salt – ½ tsp.
Green chillies – 2. Finely chopped
Sunflower seeds – 2 tbsp., crushed
Thyme – 1 tbsp.
Baking powder – a pinch
Milk – ¼ cup

Method
In a huge bowl throw in all the ingredients and knead to smooth soft dough. If you find it a little sticky, place the bowl in the refrigerator for a while.
Roll out the dough and cut into squares or if you are patient enough to any other shapes J.
Meantime preheat the oven at 150 degrees Celsius.
Place the crackers in a greased baking tray and bake for about 15-20 minutes until the sides starts turning golden brown.
Remove the tray from the oven and gently remove the crackers and place in a wire rack to cool.
Once cooled store in an airtight container.

Done and it’s as easy as this, bake and enjoy !


Tip: Roll the dough between two sheets to avoid breaking and then gently cut and place in the baking tray

Whole wheat chocolate peanut cookies sweetened with palm jaggery


Have heard a lot that when kids grow up they demand munchies for umpteen reasons to follow behind it. And mothers find it hard to let them stick on to something healthier and sane. Salads in my mind in the coming days but as of now baked some cookies. Used palm jaggery instead of sugar and whole wheat instead of refined flour as usual. To add the protein content some powdered peanuts too!
Hope this will satiate their urge to munch on and curb their hunger and cravings too!






Recipe
Butter - 1/2 cup
Whole wheat flour- 1.5 cups
Peanut powder - 1 cup
Palm jaggery syrup - 1 cup
Baking powder - a pinch
Cocoa powder - 2-3 tspns
Choco chips - 1/2 - 1 cup ( optional)


Method
Throw in all the ingredients into a large deep bowl and mix well and gently with a fork or your fingers. Add few drops of milk to bring them together if you want.
Once the dough is formed, refrigerate the dough for at least 30 minutes.
Preheat the oven for about 10 minutes at 150 degrees Celsius
Remove the dough from the refrigerator and make small balls and place it on a greased baking tray.
Bake the cookies for about 20 minutes or until you see it all puffed up and bottom turns golden brown
Remove the cookies from the tray and lay on a wire rack to cool
Once cooled completely store in a clean jar and store.


Note : For the jaggery syrup, I melt 500 gms of palm jaggery with one cup of water, strain and store and use one cup of the syrup for this cookie.

Dried rose petals and cashew cookies sweetened with jaggery syrup 

I have mentioned in one of my previous posts about buying dried rose petals on pure impulse. We don't generally use this ingredient in our daily cooking, hence my mind wanders as to what to, how to and  when to use up this flavorful ingredient. Yes its flavorful and indescribably aromatic too! My mind wandered and reached at cookies, yet again :) 

It really was a trial and error recipe but the results was not disheartening. Hubby dear gave a green signal to the product hence its making way into my blog . these little challenges and result makes us 
happy . isn't it? 
Anyway knowing that I should save the recipe before forgetting I am sharing with you all




Ingredients

Whole wheat flour - 1 cup
Butter - 1/4 cup
Jaggery syrup - 1/2 cup
Dried rose petals - 1/4 cup
Cardamom powder - a pinch
Baking powder  - a pinch
Crushed cashews - 1/4 cup

Method
Preheat the oven at 160 degrees Celsius.
Powder the dried rose petals well in a mixer or a coffee grinder.
Throw in all the ingredients in a huge bowl and mix gently with hands until you form a soft dough.
Make small balls of the dough and place in a greased baking tray.
Place the tray in the oven and bake the cookies for about 20 minutes or until you see the sides browning. If you prefer the top of the cookies to be brown as well, change to grill mode.
Remove the tray from the oven and gently remove the cookies using a spatula and place in the wire rack. The cookies will be very soft at this stage. Once it cools it turns crunchy. Store in airtight container. Ok, yea before that take a bite, taste and  don't forget to share :)

Baking is no rocket science, try it before its too late. You can make various flavours at home for kids instead of buying.

Poppy seeds and white chocolate chips cookies


These days I want to explore a lot on recipes but I feel a little lazy in blogging and I am not happy about it. Nevertheless I want to record my experiments and share it with my readers. So here goes the recipe before I miss it from my mind :)






Ingredients

Whole wheat flour - 1 1/3 cup
Poppy seeds =- 2 tbspn
Butter- 1/2 cup
Sugar- 1/2 cup ( powdered)
Baking powder - a pinch
Egg - one ( optional)
Milk - few tspns
Vanilla essence- 1 tspn

Method

Preheat the oven  at 150 degrees Celsius
In a huge bowl mix the flour, poppy seeds, softened butter, baking powder, vanilla essence and egg. Use few spoons of milk just to bring the soft dough together.Please dont knead the dough hard! it will spoil the texture of the cookies.
Make small balls from the dough, slightly flatten it and keep on the greased baking tray and bake for about 15 mins or until the sides turn slightly brown. If you prefer to have a golden brown top turn the knob of the oven to grill mode for few minutes. Once done quickly remove the cookies with a spatula and let it cool on a wire rack.
Once cool the cookies will turn crispy and crunchy.
Bake and enjoy :)

Whole wheat almond and lemon cookies

I have always been hesitant to try lemon cookies wondering how it will taste. But last week one of my good neighbours gave me nice plump and juicy home grown lemons. Since when I received it I have been thinking of trying some bakes with that. Though I thought of  baking a lemon cake I ended up baking cookies with it. Nevertheless it was yum .. Honestly I am salivating while writing this thinking about that lemony taste it leaves over your palate once you eat these cookies ;)



So following is the recipe

Whole wheat flour - 1 cup 
Ground almonds- 1/2 cup
Butter - 1/2 cup
Sugar - 1/2 cup (powdered)
Lemon juice - one large or 2 med sized ones
Baking powder - a pinch
Milk - few tspns

Method
As any other recipe of mine throw in all the ingredients  into  big bowl and gently bring it together to form a soft dough . Use milk only to bring the ingredients together. Let the dough rest for a while , about 30 mins.
Preheat the oven to 150 degrees cCelsius
Make small balls of the dough, flatten it and place it on a greased baking tray and press slightly with a wet fork
Repeat the process with the rest of the dough.
Place the tray in the oven( I usually place the tray in the top rack of the oven) and bake for about 15- 17 mins until you get a nice aroma and sides of the cookies are slightly brown.
Remove the tray and gently remove the cookies and place it on a wire rack. Let it cool and take a bite.
Store the rest of the cookies in an airtight jar.

Bake and enjoy

Whole wheat almond cookies

Cookies are one of my favourite bakes ever for various reasons..easy to bake, can use simple and healthy ingredients and above all kids love to eat it anytime 







I have  experimented and baked a lot of cookies in the past with various ingredients and almond cookies has been a favourite cookies forever. I added the chocolate flavour for the extra oomph for the product ;)

Ingredients 
Whole wheat flour - one cup
Butter - half cup
Sugar - half cup
Almond powder - half cup
Cocoa powder - 3tspn
Milk - 1/4 cup
Slivered almonds - 1/3 cu p

Method
Throw in all the ingredients in a big mixing bowl and mix it tenderly into a soft dough.
Refrigerate the dough for 30 minutes.
Preheat the oven at 150 degrees Celsius.
Make small balls from the dough , flatten it and roll it in the almond flakes.
Place it on a greased baking tray and bake for 15-17 mins until the almind flakes turn golden colour.
Remove the cookies from the rack and let it cool on a wire rack
One cooled store in an airtight jar or just munch on :)

I dint use and baking powder or baking soda in the recipe, the cookies came out good.

Whole wheat chocolate and copra (dried coconut) cookies recipe


Had couple of dried coconuts( copra) in stock. Thought of trying out cookies, yea that's the easiest I can think of with any ingredient  and I am sure its not surprising for you either :D
I used liquid jaggery instead of sugar and also used whole wheat so yea , I can claim it to be comparatively healthy. 





Ingredients
Whole wheat flour - 1.5 cups
Powdered copra( dried coconut) - 1 cup
Unsalted butter - 1/2 cup
Thick jaggery syrup - 1/2 cup
Cocoa powder - 2-3 tspns
Choco chips ( optional)
Hazelnuts ( optional - 1/4 cup
Egg - one ( I use country egg)
Baking powder - 1/4 tspn

Method
Throw in all the ingredients in a huge bowl and bring it together gently and knead it with fingers to a soft dough. If you feel the dough is not coming together please add few spoons of milk and make the dough softer.

Preheat the oven to 150 degrees.
Scoop out small portions of dough , make a ball and place it on the greased baking tray.
Place the tray in the top rack of the oven and bake for about 15- 17 mins on until the bottom of the cookie turns brown and not dark /burnt.

Remove the cookie carefully from the tray using a spatula and place it on a wire rack and let it cool.
Once cooled store in an airtight container.

Rice bran and hazelnut cookies sweetened with jaggery

(Something which is easy to bake, tasty and healthy as well) 


As i have said many times in the past I just love baking cookies because its very easy to assemble and bake and also there are lot of options which we can explore. So this time I boldly tried baking cookies with rice bran just to see what could be the result. And thankfully it was accepted my family. I can proudly share the recipe with you all.

Ingredients

Whole wheat flour - 1 cup
Rice flour - 1/2 cup
Rice bran - 1/2 cup
Hazelnuts - 1/2 cup ( crushed)
Thick jaggery syrup - 1/2 cup
Butter - 1/2 cup
Baking powder - 1/3 tspn
Egg - one ( I use country egg )
Choco chips ( optional)

Method 

Throw in all the ingredients in a huge bowl and gently bring in together . I dint use any milk in this recipe since the ingredients came together when I mixed. You may add more jaggery syrup or few spoons of milk if you find it difficult to make the soft dough.
Preheat the oven to 160 degrees Celsius
One the soft dough is formed, scoop spoonful of dough, roll and flatten slightly and place in the greased baking tray.
Keep the tray in the top rack of the oven and bake for about 15-18 minutes until you see the bottom of the cookies have turned dark brown.
Remove the tray from the oven and gently remove each cookie and place in the wire rack to cool.
Once cool the cookies becomes crisp , store in a air tight container .

As i said isnt it easy to bake these cookies ! Bake and enjoy!! :)

Whole wheat almonds and hazelnut cookies with saffron and cardamom flavor



Easy and tasty recipe of yet another cookie

Ingredients
Whole wheat flour - 2 cups
Butter - 1 cup
Sugar 3/4 cup ( powder it )
Almonds -1/2 cup ( I use mamra variety of almonds, powder it)
Hazelnuts - 1/2 cup ( powder it)
Saffron - a pinch
Cardamom powder - a pinch

Method
In a large mixing bowl throw in all the ingredients and knead softly and gently, once the dough come together make small balls and place in a baking tray, press slightly with a fork. Preheat the oven at 150 degrees Celsius and place the tray in the top rack of the oven. Bake for 10-11 mins and then grill for 2-3 minutes, now that's how I do and been doing :)
Once done, remove from the oven and slowly place each cookie on the wire rack to let it cool.
Once cooled store in an airtight jar.
Done!!! .. Enjoy!

Whole wheat- puffed rajgira cookies sweetened with jaggery syrup



This is a cookie recipe which is easy, healthy and can be stored for few days and can be sent as snacks for school going kids. Following is the recipe for the same

Ingredients

Rajgira (puffed) - 1/3 cup
Atta - 1 1/3 cup
Butter- 1/2 cup
Jaggery syrup - 1/2 cup
Hazelnuts - crushed- 1/4 cup
Baking powder - 1/8 tspn

Method
Mix everything and knead softly and make a soft dough. Make small balls and place in a greased baking tray.

Preheat the oven for ten minutes at 150 degrees celsius, place the cookie tray in the top rack and bake for around 8-10 minutes, when you feel that the bottom of the cookies are baked slowly shift the mode of the OTG to grill mode and grill for another 5-8 minutes..make sure that the top and bottom should not get dark brown , it should be just golden brown.

Remove the tray from the oven and remove each cookie carefully ( it would be soft ) from the tray using a flat spatula and let cool till it turn crispy and then store in airtight jar.

Chewy avocado almond cookies


Chewy avocado almond cookies


One of the days that I wanted to experiment making cookies with avocados :) The result has been not bad either.

Following is the recipe

Ingredients 
Mashed avocado - 1 cup
Whole wheat flour- 1/2 cup ( I use organic wheat flour)
Ground almonds- 1/2 cup ( I use mamra variety almonds)
Sugar - 1/3 cup
Butter - 1 tbsp
Baking powder - a pinch
Desiccated coconut 

Method
Take a big bowl and throw in all the ingredients except desiccated coconut, mix well with a fork initially and then with the hands to a smooth dough.
Preheat the oven at 180 degrees.
Slightly butter a baking tray, make small balls of the dough, place it in the baking tray, press it with a fork and then sprinkle some desiccated coconut over it.
Bake the cookies for about 10-15 mins and grill for around 5 mins.
Remove the cookies and let it cool in a wire rack.

Note: these cookies are chewy and not crunchy.

Hazelnut cookies coated with tempered chocolate


A post after a while :) and yes it is a cookie... This is one thing which is very easy with cookies is that its easy to make and you can finish of your work when you enjoy it in less time. And what better way to spend time with your kids when you bake along them. Had lots of hazelnut in my pantry bought for making home made Nutella, so thought of trying cookies with the same. Here goes a recipe for it

Ingredients
Hazelnut - 1/2 cup (powdered)
Almonds - 1/4 cup (powdered)
Wheat flour - 1 cup
Sugar ( powdered) - 1/3 cup
Butter - 1/2 cup
Baking powder - 1/4 tsp
Milk - if required

Method
Assemble all the ingredients in a mixing bowl except milk and gently mix together until it comes together. Make sure it doesn't come stiff or hard. If you feel so add  milk tsp by tsp to make the dough soft. Knead it softly . Make balls , flatten it and bake in a preheated oven at 150 degrees Celsius

Once cookies are baked, let it cool in a wore rack .
Meanwhile temper dark chocolate and coat it over cookies and sprinkle sprinkles of your choice.

Fresh fig cookies


As I mentioned in some other posts, living n Bangalore we get exposed to many varieties of  fruits and vegetables and I always get tempted to pick it up , taste, explore and one such baby is this fresh fig cookies and the result was not bad either ..Following is the recipe

Ingredients
Fresh figs puree- 1/2 cup ( remove the skin and blend)
Whole wheat flour - 1 and half cup
Butter - 1/3 cup
Sugar - 3 tbspns
Baking powder - 1/3 tspn
while chocolate chips ( optional)

Method
Preheat oven to 150 degrees
Mix the flour, butter, fig puree, sugar, baking powder  into a soft dough. Sprinkle the while chocolate chips if you have ( this is just for the extra USP with kids ) and then is is easy . Make small balls and place it in the greased tray and press slightly with a fork and bake in the top rack of the oven for 8-10 minutes or until you feel the bottom is browned and them change the mode of the oven to grill mode and grill for another few minutes till the top turns brown. Remove the tray from the oven and remove the cookies from the tray and let it to cool in the tray. The cookies should become hard and crisp when cooled. Enjoy!

Multigrain choco- chip cookies


Its been long I have blogged and its even more longer that I have baked some cookies, I was seriously thinking of substituting sugar with something healthier and just the other day I made some jaggery syrup at home. So when I saw my freshly collected home made butter and this jaggery syrup I thought of going a step high in making some crunchy cookies and hence the resultant product. Fine will take you to the recipe too !

Ingredients
Ragi flour - 1/3 cup
Barley flour - 1/2 cup
Powdered coconut- 1/2 cup
Butter - 1/3 cup
Jaggery syrup- 1/3 cup
Sesame seeds - 2-3 tspn
Choco chips - a handful
Baking powder - a pinch

Method

Mix all the ingredients in a large bowl except the choco chips into a soft dough , add the choco chips in the final stage of mixing 
Scoop small quantities of the dough and place in a greased baking tray .
Place the tray in the top rack of the oven and bake in a preheated oven for about 10 minutes and then grill for another few minutes until the top and bottm of the cookie is slightly browned. 
Remove the cookies to a wire rack and let it cool!
Store in an airtight container and enjoy the cookies with your tea
Totally guilt free cookies !!

Jowar cookies


Been long time I baked some cookies, and wanted to try something new too. Had jowar flour in my flour bank :), so thought of baking with it. It was not bad ! Kids enjoyed it . Would like to share the recipe here

Ingredients

Jowar flour- 1 cup
Whole wheat flour- 1/2 cup
Sugar - 1/3 cup (powdered)
Flaxseed - 1/2 tbspn ( powdered)
Butter- 1/2 cup
Choco chips- one handful ( optional)
Baking soda- 1/4 tspn

Method
Mix all the ingredients to a smooth and soft dough. Add milk if necessary. Make small balls, flatten and place in the greased baking tray. Press lightly with a fork and bake in a preheated oven at 150 degrees celsius. Following is my method of baking cookies

I preheat the oven ( I bake in my OTG) for ten minutes at 150 degrees celsius, place the cookie tray in the top rack and bake for around 6-8 minutes, when you feel that the bottom of the cookies are baked slowly shift the mode of the OTG to grill mode and grill for another 5-8 minutes..make sure that the top and bottom should not get dark brown , it should be just golden brown.

Remove the tray from the oven and remove each cookie carefully ( it would be soft ) from the tray using a flat spatula and let cool till it turn crispy and then store in airtight jar.

Coconut choco-chip cookies


Coconut choco-chip cookies

Ingredients

Whole wheat flour- 1 1/2 cup
Fresh grated coconut- 1 1/2 cup
Sugar- 1/2 cup to 3/4 cup
Butter- 1/2 cup
Baking powder- 1/3 tspn
Vanilla essence - 1/2 tspn
Salt - a pinch
Choco chips- 3/4 cup

Method 
Mix all the above ingredients to a soft mixture, the wetness of the grated coconut and butter would be enough to help the mixture come together to form a soft dough.Throw in the choco chips and gently swirl in the dough. Scoop out smal balls and roll it between your palms and place in a greased baking tray and flatten the balls slightly. Repeat the same for the rest of the dough. 
Bake in a preheated oven at 150 degrees celsius for about 10-12 minutes until the top and bottom of the cookies turns brown.
Remove the cookies from the baking tray and let it cool in a wire rack.
Store in airtight containers when cool.

My way of baking cookies in the OTG is as follows
Preheat the oven in bake mode and place the baking tray in the top rack, bake the cookies for some 4-6 minutes or till u feel the bottom would have cooked and then shift it to grill mode so that the top gets cooked and browned for another 5-6 minutes.

Ingredients 

Powdered sugar- 1/2 cup
Butter - 1/2 cup
Milk or orange juice- 6 tbspn
Vanilla essence - 1/2 tspn
baking powder - a pinch

Method

Bake at 150 degrees Celsius it in the preheated oven for about 10 - 12 minutes.

Whole wheat flour- 1 1/2 cup
Mix all the ingredients and make a very soft dough, Make small balls , roll it between you palms, flatten it a little and keep in the baking tray, press the balls slightly with a fork.
