Beetroot and potato salad in homemade egg less mayo dressing

Beetroot and potato salad in homemade egg less mayonnaise.

Been exploring couple of salads these days, recently tried making homemade egg less mayonnaise which came out pretty good. Since I am slightly hesitant in eating raw vegetables I tried making this beetroot and potato salad in which vegetables have been steamed. My husband was quite curious and unsure about how the beetroot would turn out, no concerns about potato though ;)


Before getting into the recipe of the salad let me get into the recipe of egg less mayonnaise.


Ingredients for the egg less homemade mayonnaise 


Hung curd - one cup

Vinegar - 2 tspn
Salt - 1/2 tspn
Pepper - 1/4 tspn
Mustard paste - 1/2 tspn
Sugar - 1 tspn
Olive oil - 1- 2 tspns ( optional)

Mix all the ingredients well and adjust the seasoning. 


Once you get the mayo ready set up the ingredients for the salad
Ingredients
Beetroot - 2 med size
Potatoes- 2 med size
Onion- one med size
Lemon - 1
Salt and pepper 
Coriander leaves - finely chopped
white and black sesame seeds - for garnishing/

Method
  • Wash , peel and cut into half and pressure cook the beetroot and potatoes for 1-2 whistles or just until it is cooked.
  • Slice the onions thinly and squeeze the lemon and sprinkle some salt and let it rest.
  • Once the potatoes and beetroots are cooked cut into cubes and add it to the onions. Add few spoons of mayo and mix well. Garnish with finely chopped coriander leaves, and sprinkle some white and black sesame seeds.
  • You may let the salad rest in the refrigerator for sometime

Cucumber and pomegranate salad in hazelnut oil and orange juice dressing




This is a very fresh, healthy and tasty salad which is made in no time. You could watch this video to  learn a new technique of de-seeding a pomegranate, and if you already know and use the technique, very good  for you.

Ingredients for the salad
Cucumber - 3 medium size ones
Pomegranate- 1 large
Herbs (Mint leaves or coriander leaves) - 1/4 cup
Lemon juice - 3 tbspn
Orange juice - 1/2 cup
Paprika - a pinch
Tobasco sauce - 2 tspns
Hazelnut oil - 2 tbspns
Salt and pepper - for seasoning

Arrange the vegetables and fruits in a plate.
Whisk together the rest of the ingredients and oil until emulsified. Pour over the salad just before serving.

Brown chana- snowpeas stir fry



Ingredients


Brown chana - 3/4 cup
Snow peas- 100 gms
Onion- 1 
Green chillies- 2 
Coconut- 1/4 cup ( cut into small pieces)


Method 


Soak the black chana overnight and pressure cook till soft. Heat a little oil in a kadai. Put in the onion and green chillies, add in the cooked black chana and chopped snowpeas. Add in the salt, pepper powder and coconut pieces. Stir well and serve hot!

Salad - 1



Salad is something soothing ,filing and less of calories, can be made quickly and enjoyed well with dressing of your choice . The following is a simple and quick salad with the simplest dressing. :)


Bok choy with cucumber, cherry tomatoes and carrots salad
Bok choy - A bunch
Cherry tomatoes - few
Cucumber - On

Carrot - one
Pepper powder - a pinch or two
Salt as required
Olive oil and extra virgin Olive oil
Ginger and garlic - finely chopped

Method
Heat pan, add little olive oil and add the finely chopped garlic and ginger, add in the chopped bok choy , saute for a while .  Take off the pan and empty into a serving bowl. Add in the cherry tomatoes, chopped cucumber, grated carrots and season with salt and pepper powder.
