Ice apple rose coconut milk shake recipe

I know I am getting carried away with these ice apples and the dried rose petals .. Been thinking of trying something new, refreshing and healthy with these ingredients and came up with this. This is one of the best drinks to be had in a summer afternoon, chilled or at room temperature.

Alright, following is the recipe



Ingredients

Ice apples/ nongu - 2
Dried rose petals - 1/4 cup ( may use rose syrup instead)
Coconut milk - 1 cup
Sugar 2-3 tsp
Water - 1 cup

Method
Blend the ice apples and coconut milk well, add the dried roses and let it soak for sometime. Add the water and strain.
Garnish with chopped nungus and dried rose petals and serve chilled.

Just as simple as it is !:)

Tips

I made fresh coconut milk at home, you could use store bought one.
May replace sugar with jaggery syrup.

Lassi with dried rose petals - Rose lassi


Summer, heat, craving for cool drinks is all synonyms. There are ingredients which are body coolants and dried rose petals are one of those. I have had few recipes with rose petals before and now this one to add on :)

All is fair as long it tastes good!!

This is made with no essence or colours, just used dried rose petals, fresh and clean rose petals must be as good.







Ingredients
Dried rose petals - 2-4 tbsp
Fresh chilled curd - 1 cup
Sugar - as required
Few ice cubes
Water - 1/4 - 1/2 cup

Method
Soak the petals in water so that it releases the essence. Squeeze out the petals completely. Now blend the rose water with curd and add the sugar. Serve cold.

Recipe for rose flavoured palpayasam

I know what you guys must be thinking, again dried rose petals recipe...yea, I have been smitten by it and what better occasion than Holi to use it up :)
I saw ample recipes using dried rose petals but finally thought of infusing it in my palpayasam recipe. I have a recipe of palpayasam which I usually make in pressure cooker. Did the same recipe but with a twist. So here goes the recipe




Ingredients

Rice - 1/3 cup ( I use jeera rice)
Ghee - 1 tspn
Milk - 500 ml
Sugar - 1/3 cup
Milk powder - 1/2 cup
Dried rose petals - 2 tbspn
Chopped dry fruits for garnish.

Method
Wash and drain the rice
Keep the pressure pan on stove, add ghee and roast the rice in the ghee for about 1-2 minutes.
Pour in the milk, add the sugar and close the lid of the pressure cooker and pressure cook for about 1-2 whistles.
Open the lid once pressure is released and add the rose petals, stir in the milk powder and stir for another few minutes.
Serve hot or cold and garnish with finely chopped nuts.

Note: 
  • Adding milk powder is optional, you may return the pressure cooker on stove and cook for sometime to make the payasam thick.
  • You may tie the rose petals in a small potli and add to the payasam and remove it off once its flavour has entered the payasam . I did that since I was afraid my kids would make a big fuss on seeing the petals.

Dried rose petals and cashew cookies sweetened with jaggery syrup 

I have mentioned in one of my previous posts about buying dried rose petals on pure impulse. We don't generally use this ingredient in our daily cooking, hence my mind wanders as to what to, how to and  when to use up this flavorful ingredient. Yes its flavorful and indescribably aromatic too! My mind wandered and reached at cookies, yet again :) 

It really was a trial and error recipe but the results was not disheartening. Hubby dear gave a green signal to the product hence its making way into my blog . these little challenges and result makes us 
happy . isn't it? 
Anyway knowing that I should save the recipe before forgetting I am sharing with you all




Ingredients

Whole wheat flour - 1 cup
Butter - 1/4 cup
Jaggery syrup - 1/2 cup
Dried rose petals - 1/4 cup
Cardamom powder - a pinch
Baking powder  - a pinch
Crushed cashews - 1/4 cup

Method
Preheat the oven at 160 degrees Celsius.
Powder the dried rose petals well in a mixer or a coffee grinder.
Throw in all the ingredients in a huge bowl and mix gently with hands until you form a soft dough.
Make small balls of the dough and place in a greased baking tray.
Place the tray in the oven and bake the cookies for about 20 minutes or until you see the sides browning. If you prefer the top of the cookies to be brown as well, change to grill mode.
Remove the tray from the oven and gently remove the cookies using a spatula and place in the wire rack. The cookies will be very soft at this stage. Once it cools it turns crunchy. Store in airtight container. Ok, yea before that take a bite, taste and  don't forget to share :)

Baking is no rocket science, try it before its too late. You can make various flavours at home for kids instead of buying.

Dried rose petals and vanilla bean panacotta recipe

Ordered for dried rose petals with my online grocer on impulse, the house smelled nice when it was delivered. But the problem starts when you have no idea how to use it up!.. yes , the story starts there. Posted my query in a cooking group where I got few suggestions and panacotta was one among it. Checked for recipes but nothing satisfied me, so just read few recipes and came up with one of my own. That's what earning is about , right? Anyway ..the result is here though it got a bit scratched when I was un moulding it into a plate. Never mind, will be more careful next time and i guess this can be pardoned as long as it tastes good too. 
But wait..there is a saying 'the dessert needs to be spectacular because it is served then the gourmand is no longer hungry' . In that case this is not to the mark. ;)





Coming to the recipe


Ingredients
Milk - one cup
Fresh cream- one cup
China grass/ agar agar - 5 gms dissolved  in 50 ml water
Sugar - 3-4 tbspn
Vanilla bean - half of one bean or few drops of essence.
Dried rose petals - 3 tbspn packed

Method
Keep ready 4 small bowls or ramekins smeared with a little oil.
Mix the milk, cream, the petals and scrape out the vanilla bean and warm it up
Melt the china grass in water in microwave.
Pour a little of milk cream mixture into the melted china grass and then mix well and then add this to the whole of the milk and cream mixture.
Sieve this mixture into prepared moulds and let it sit in the fridge for few hours. If you want a firm panacotta, let it rest overnight.
Slowly remove the panacotta from the sides and unmould it into a plate or scoop and eat from the mould itself. Either way you wish.
