Orange marmalade cake


Ingredients
1/4 cup orange juice
2 tspn grated orange rind
1/2 cup orange marmalade
2 1/2 cups whole wheat flour 
2 1/2 tspn baking powder
150 gms butter
3/4 cup sugar
3 eggs separated
1/2 cup tutti frutti
1/2 to 2/3  cup milk


Method


Preheat oven to 180 degrees celsius. Grease and line a baking pan
Sift the flour and baking powder together. Cream the butter, orange rind, sugar and egg yolk in a bowl with an electric mixer on a med speed or with a whisk until light and fluffy. Stir in the marmalade and tutti -frutti. Fold in the sifted flour alternatively with milk and orange juice.
Beat the egg whites until they form peaks and fold gently into the cake mixture.Pour the batter into prepared tin and bake in the preheated oven for 25 - 35 minutes . Remove from the oven and transfer to a wire rack to cool.

  1. hi, cake looks delicious.. can i use the same batter to make cupcakes? do i need to reduce the baking time?
